They just don't have enough casks mature enough to produce this vision outside of this limited edition yet but its a great sign if this is where they are heading

They are focusing on using older less commercial varieties of Barley - in this instance Maris Otter

More in the bourbon tradition with a mixed grain mashbill but with Aussie grains and a bit of Aussie innovation this has a distinctly Aussie character than makes this well worth trying

Nice sweet peat, pancakes with lemon and sugar, creamy oysters and coastal salty notes, some spice and pepper on the finish nice oily mouthfeel.
