and was one of the windy city's best loved restaurants

Staff drew water from the property's own well so guests did not have to drink from the city's then questionable public water supply

The main dining room was the Grand Salon where lunch and dinner was served by waiters in formal dress. There was a smaller Grill Room and ladies could dine with their friends in a separate area.
